1st assignment in it own word document. Using the information on page 282, including the four steps for management decision making and figure 10.3 on page 283, complete the following case study of FSM2033 Bistro:
FSM2033 Bistro features an appetizer pizza that has been popular for several years. The standardized recipe calls for the pizza to be served cold after being cut into 12 equal-sized pieces, and the pizza is topped with cream cheese and smoked salmon. The garnish is a dollop of crème fraîche with caviar on all 12 pieces.
The presentation is not like the menu description, and the temperature and texture are incorrect as well. Lately, the pizza is being served on the hot crust, making the cream cheese soft and causing the crème fraîche to melt into the smoked salmon. Some servers have mentioned this to the chef and have stopped recommending the once-popular appetizer. Additionally, the manager has noticed that sales are down for this item.
Prompt: Write a detailed description of what persons in each of the following positions should do to identify the cause of the problem and correct it: server, cook, and manager. As you develop each employee’s role in the problem-solving process, think about three things:
What will you do that will improve consistency and quality?
What are the specific actions you will take?
How should the changes be implemented? How much time will be needed to make these changes?
The 2nd assignment Using the Excel workbook that is in conjunction with the reading assignment found in this week’s content complete the following by applying your Knowledge:If the food cost is 30 percent, how much did the food actually cost?If the beverage cost is 25 percent of beverage sales, how much did the beverages cost?
If the labor cost is 28 percent, how much money does that represent and how much is left over for other costs and profit?
If a 33 percent food cost is required and a menu item sells for $16.95, what is its cost supposed to be?
Sales at your restaurant for the month of October are $685,324. If a 25 percent labor cost is expected, what would that be in dollars?
Calculate, using the XLSX document below, the income statement and budget forecast comparison. (Sample on page 291). After completing the form determine the monthly variance for each category. See below: Week 6 Assignment – Italian Restaurant Analysis.xlsx.
Finally, after completing the variance determine action steps that you would take to control the costs. For a real-life example, imagine that the numbers you are looking at. Have been caused by the pandemic COVID19. As a manager what changes do you suggest for getting costs back in control while still maintaining quality (see all of chapter 10 and referenced chapter 7 on page 290). What would be your priorities?

It is superbowl time. In case you have been living under a rock, one of the most powerful women on the planet is now part of the Professional Football Landscape. It is undeniable that this has had an impact on ratings. This makes for some interesting (and meant to be in good fun) wagering situations for the game.
Take a look at the following wagering ideas taken from an article about wagering and the big game. Even though this is mean to be satirical the bets are real. If you do not know, the numbers to the right of the sitaution are odds and we will discuss those later in the course.
More than anything this just illustrates one of the many ways that an estimated $23 Billion will be spent on wagering for the game.
Taylor Swift-themed props
Shake it off: 49ers to score first, Chiefs to win (+350, DraftKings): This follows the game script of last year, where the 49ers went up 3-0 in the first quarter, but blew a fourth-quarter lead as the Chiefs won, 31-20.
Today was a FairyTale: Kelce to score a TD and Chiefs to win (+240, DraftKings): Kelce has scored a touchdown in eight of the last nine playoff games. If you have the Chiefs winning, this is a good bet.
Anti-Hero: Brock Purdy 250+ passing yards and 2+ passing touchdowns (+200, DraftKings). Purdy has hit this prop in six of his 16 regular season starts this season, and zero in his two playoff appearances this postseason.
Mine: Travis Kelce to record 87+ receiving yards (Yes +190, DraftKings). Kelce has hit this prop in just four regular season games and just one of Kansas City’s three playoff games.
Look What You Made Me Do: Chiefs trail in the fourth quarter and win the game (Yes +500, DraftKings). When these teams met in Super Bowl LIV, the 49ers led by 10 points in the fourth quarter and Kanas City won the game. Could history repeat itself?
What are some of the other bets that you can make during this game? Do you think that the above situation would make for a good marketing tool at your casino to drive wagering for the game?
